When you flip your knife at the right time, you can cut through pencils, pipes, anvils, and more. You will always have to keep the knife in the air. And to do this, you have to knock and flip the knife over and over again.
You can even use the handle to bounce off of obstacles to flip the knife back and give yourself a better chance of cutting. Don't touch the water or you'll have to stop running. Same thing with ditches: don't fall into them! Try to hit the checkpoints, which are the dark gray boards.
